Ingredients:

    * 3 pounds (1.5 kilo) chicken pieces
    * 1/2 cup all-purpose flour
    * 1/2 tsp. salt
    * 1/2 tsp. pepper
    * 4 Tbsp. olive oil
    * 1 onion, chopped
    * 3 garlic cloves, minced
    * 1 green pepper, cut into thin slices
    * 1 red pepper, cut into thin slices
    * 5 tomatoes, chopped
    * 2 Tbsp. steak sauce
    * 1/2 cup dry white wine
    * 8 ounces tomato sauce (optional)
    * 1 1/2 cups sliced mushrooms

Preparation:
1. Prepare chicken pieces - I use 6 thighs and 6 legs. In a small bowl, mix flour with salt and pepper. Heat oil in a large skillet. Wet chicken in water, shake off excess, dip in seasoned flour, and place in hot oil in the skillet. Brown on each side. Remove to a large baking pan. 2. Preheat oven to 350°F (180°C).
3. In the same skillet, add onion, garlic, and peppers. Saute until the onion is soft.
4. Add tomatoes, steak sauce and wine. Simmer for 10 minutes.
5. Pour the cooked vegetables and wine over the chicken in the pot. Cover. Bake for 45-60 minutes.
6. Add sliced mushrooms. Baked, uncovered, for 15 minutes, or until the chicken cooked through.

Notes:
1. For a saucier chicken, add 8 ounces of tomato sauce when adding the wine.
2. I muse 6 chicken thighs

Serving Suggestions: Serve warm over white rice. Serve with roasted broccoli as a side dish.

Yield: 6-8 servings.
