Garlic Baked Sea Bass

This Garlic Baked Sea Bass recipe is easy enough for novice fish cooks to master. Simply rub some olive oil, lemon juice, minced garlic, salt and pepper into this mild fish, and bake for 20 minutes. Sometimes it is surprisingly simple to prepare a delicious, healthy main dish.

Ingredients:
* 2 pounds (1 kilo) sea bass fillet
* 3 Tbsp. olive oil
* 1 Tbsp. lemon juice
* 6 garlic cloves, minced
* 1/2 tsp. salt
* 1/2 tsp. freshly ground black pepper
* 1 Tbsp. fresh parsley leaves, chopped
Preparation:
1. Preheat oven to 450°F (220°C). Spray a shallow glass baking dish with non-stick spray. Place the fish in the pan, skin-side down.
2. In a small bowl, mix together the olive oil, lemon juice, garlic, salt and pepper. Rub the oil mixture into the fish.
3. Bake the fish, uncovered, for 15 minutes.
Sprinkle the chopped parsley on top of the fish, and bake for another 5 minutes. The fish is done if it flakes (breaks apart) easily when a fork is inserted into the thickest part of its flesh.
Yields: 4 servings.
Note: Fish bought fresh from a fish store is generally much better than fish from the grocery store frozen section.
