3 cups scalded milk 1 Tbsp. butter 1¼ cups cooked rice ½ cup sugar ¼ tsp. salt ½ cup raisins ¼ tsp. mace 2 eggs, slightly beaten
Directions: Mix milk and next 6 ingredients; slowly stir into the eggs. Turn into a greased 1½ quart casserole. Set in a pan half-full of hot water. Bake at 325F for about 1 hour, stirring 1 or 2 times during first 30 minutes. Knife inserted near edge comes out clean when pudding is done. Makes 6 servings.
