Jackstraw Lo Mein

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

8 ounces cooked beef
1 cup sliced celery
½ cup boiling water
1 cup shredded lettuce
1/1/3 cups cooked, enriched thin spaghetti
1 cup bean sprouts
¼ cup beef bouillon
¼ cup soy sauce
1 teaspoon dry mustard or to taste

Directions: Cut beef into match-like sticks. Combine celery and boiling water in saucepan, and cook over medium heat for 6 minutes. Add lettuce, and cook 2 minutes longer. Drain. Add spaghetti, bean sprouts, and beef. Combine beef bouillon, soy sauce, and mustard; mix well. Pour over mixture in saucepan; toss gently to mix. Divide evenly. Makes 2 luncheon servings.
