Tunisian Maakub

Ingredients:

1 small chicken, cooked
7 eggs
1 hard-boiled egg
1 piece bread
salt, pepper, caraway, cinnamon to taste
3-5 Tbsp oil
2-3 Tbsp chicken soup (or bouillon)

 

Instructions:

Grate the cooked chicken. Mix in eggs.
Place the bread in water and then crumble into the egg-chicken mixture.
Cut the hard-boiled egg into slices and fold into batter.
Season.

Heat oil in a small pot. Pour mixture into pot (cover the pot!). Cook on a very low flame for about an hour (until the sides have browed).

Carefully flip the maakub (you can place a plate on top of the pot, and then carefully turn the pot over), replacing the upside down maakub into the pot.

Pour the chicken soup along the sides of the pot. Cook another 15
minutes.
