Potato
& Lentil Soup

this great recipe!
Ingredients:
1kg red lentils, washed
3 large onions, chopped
3 vegetable stock cubes
2 potatoes, peeled and diced
oil for frying
salt and pepper to taste
Instructions:
Fry the onions in a little oil until
lightly browned. Add the lentils, stir fry for 1 minute. Add water
(pot should be approximately 3/4 full). Bring to boil. Skim top,
then add crumbled stock cubes, salt and pepper, simmer covered for
half an hour. Add potatoes. Bring back to boil, simmer for further
30 minutes. Add more seasonings if required, stir occasionally.
