Chanie's Delicious Cheese Cake

Ingredients:

Base: Cheese Cake

  • 10 Graham crackers
  • 3 tablespoons oil or melted butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
Cheese filling:
  • 2 cups soft white cheese
  • 1 cup sour cream
  • 2 eggs
  • 1/2 cup sugar
  • 3 tablespoons self-raising flour
  • 1 envelope vanilla sugar or
  • lemon rind and 1 teaspoon lemon juice
Topping:
  • 1 cup sour cream
  • 3 tablespoons sugar
Instructions:
  • Blend crackers in food processor. Add oil or butter, sugar and cinnamon.
  • Put cracker mixture in a 10" pie dish and pat down.
  • Combine the cheese filling ingredients together and pour onto cracker base.
  • Place pie dish in microwave and cook on high for 11 minutes.
  • Allow to set for 5 minutes.
  • Combine sour cream and sugar for topping and pour on the cake.
  • Microwave for a further 2 minutes.
  • When cake is cool, decorate with fresh strawberries or with blueberry pie filling.
  • Bake on 300 F for 30 minutes. Allow to stand for an additional 5 minutes. Add topping and bake for another 5 minutes. Can be baked in a large toaster oven.
