Doughnuts

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

3 eggs
1 cup sugar
½ cup margarine melted
1 cup milk
About 4 cups flour
3 teaspoons baking powder
¼ teaspoon salt
Oil for deep frying (about 5 cups)
Confectioner’s sugar (optional)

Instructions:

:Beat eggs until very light; add sugar and beat until thick and creamy. Add melted margarine and milk; mix. Sift 3 cups of flour with baking powder and salt; add to batter. Add just enough flour to make a dough that can be rolled. Lightly roll dough to about ½ inch thickness and cut out doughnuts with doughnut cutter. Heat oil to 375F and gently lift doughnuts into it, a couple at a time. Fry, turning twice, until doughnuts are a nice golden color. Drain on paper towels. While still warm, shake doughnuts in a paper bag with confectioners’ sugar. Makes about 2 dozen.

Note: The oil can be reused. Wait until it cools slightly, then strain through cheesecloth or coffee filter into a clean glass jar. Store in a cool place.
