Almond
Lemon Squares

Ingredients:
1½ cups sifted Unbleached flour
2/3 cup soft butter or margarine
¾ cup sugar
1 tablespoon grated lemon rind
2 egg yolks
Milk
½ cup whole blanched almonds
1 teaspoon cinnamon
Instructions:
Sift flour into large bowl. Add
butter, ½ cup sugar, lemon rind and egg yolks; blend until
crumbly but moist. Pat mixture evenly into bottom of 13*9*2-inch
baking pan; brush lightly with milk. Finely chop almonds; mix with
cinnamon and ¼ cup sugar and sprinkle over dough. Bake in
pre-heated 375F oven 15 minutes. While slightly warm, cut into squares.
Makes about 24 squares.
