Apple Raison Coffee Cake

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:
¾ cup sugar
¼ cup soft shortening
1 egg
½ cup milk
1/1/2 cups sifted gold medal flour
2 tsp. double-action baking powder
½ tsp. salt
½ cup seedless raisons

Instructions:

Preheat oven 375F. Mix together thoroughly sugar, shortening and egg. Stir in milk. Sift together and stir in flour, baking powder, and salt Then add raisons and spread batter in greased and floured square pan, 9*9*1/3/4in. Arrange apple slices in fancy design on top of batter, pressing them in slightly. Sprinkle top with 1 tsp. cinnamon mixed with 2 tbsp. sugar. Bake 25 to 30 min. in quick moderate oven (375F) until wooden pick thrust into center of cake comes out clean. Serve warm, fresh from the oven. Makes nine 3-in squares.
