Hamantashen Recipe

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

4 cups sifted all-purpose flour
4 eggs
3 teaspoons baking powder
½ cups vegetable oil
¾ cup sugar
grated rind of lemon or orange
¼ teaspoon salt

Instructions:

Mix, sift dry ingredients. Add eggs, oil, rind. Mix well. Knead until smooth. Roll on floured board to 1/8 inch thickness. Cut into 4 inch rounds. Place a heaping teaspoon of filling in the center of each and bring edges together to form a triangle, pinching together to close securely. Bake on greased sheet in 375 oven about 30 minutes.

Hamantaschen may be filled with any good poppy seed, apricot, cheese, or prune filling. Here is a prune filling:

1 lb. Prunes, 2 teaspoons lemon juice, grated rind of lemon.

Soak prunes several hours or overnight. Cook until soft. Drain and remove pits. Chop fine. Add rind and lemon juice. If desired, a little cinnamon and sugar may be added to taste. Place a heaping teaspoon in the center of each hamantasch.
