Mollies Apple Cake

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 c. sugar
½ c. oil
4 eggs
1/1/2 c. flour
2 tsp. baking powder
2 tsp. vanilla
5 c. thinly sliced or grated apples
½ c. raisons
1 tsp. cinnamon
2 tbs. brown sugar

Instructions:

Preheat oven to 325F. Grease on 8*12 baking pan. Combine oil, eggs and sugar until well-blended. Add vanilla. Sift flour with baking poser and blend in apples, raisons, cinnamon, and brown sugar. Set aside. Pour 2/3 batter in prepared pan. Top with apple-raison filling. Cover with remaining batter. Bake 1/1/4 hrs. or until apples are tender and cake tests done.
(Don’t add flour to batter until fruit ready. Batter thickens very fast).
