Raison Toffee Bars

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 cup sifted regular all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup regular margarine or butter, softened
1 cup brown sugar, firmly packed
2 eggs
1 teaspoon vanilla flavoring
2 cups Kellogg’s 40% bran flakes
1 cup raisins

Instructions:

Sift together flour, baking powder and salt. Set aside. Beat together margarine and sugar until very light and fluffy. Add eggs and vanilla; beat well. Stir in Bran Flakes and raisins. Add flour mixture; stir until thoroughly combined. Spread evenly in greased 9*9*2-inch baking pan. Bake in moderate oven (350F) about 35 minutes or until done. Cool in pan on wire rack. Frost with Confectioner’s Sugar Icing and sprinkle with chopped nuts or flaked coconut, if desired. Let stand until icing is set; cut into bars. (Yield 18 Raisin Toffee Bars 3*1½ inches

Confectioners Sugar Icing: Combine 1 cup sifted confectioners sugar, 1 tablespoon soft margarine or butter, ½ teaspoon vanilla flavoring and 2 tablespoons milk; beat until smooth. Spread evenly over cooled Raisin Toffee Bars.
