Saipai Pillas

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

2 c. all purpose flour
1 TBS baking powder
½ tsp. salt
1 TBS. shortening
2/3 c. lukewarm water
Cooking oil for deep frying
Sifted powdered sugar

Instructions:

Sift together flour, baking powder and salt. Cut in shortening until mix resembles corn meal. Gradually add water. Stir with fork (dough will be crumbly). Turn onto floured surface, knead into smooth ball. Divide dough in ½, cover and let stand 10 min. Roll each ½ into 12/1/2 * 10in rectangle. Using knife or cookie cutter cut 18 –2/1/2in sqs. (Do not reroll or patch dough). Fry a few at a time in deep oil(425F) about 30 sec. per side. Drain on paper towels. Serve with powdered sugar.
