Anisette Rice Pudding

Ingredients:

5 cups whole milk
¼ cup sugar
1 vanilla bean, scraped
1 cinnamon stick
1 piece star anise
¼ teaspoon anise seed
Salt, pinch
½ cup sun dried cherries
½ cup risotto, short grain rice
¼ cup light brown sugar
2 tablespoon anisette

 

Directions:

In a medium soup pot combine the milk, sugar, vanilla bean, spices and cherries. Bring to a low boil, stirring often to prevent sticking. Add risotto and cook until tender and milk has been absorbed. Remove from heat. Add the light brown sugar, anisette and stir well. Let cool. Cover and refrigerate. Serve chilled
