Cheese and Raison Latkes

Ingredients:

2 eggs, separated
¼ c. water
2 tbspns. sugar
1 tspn sugar
1 pound cottage cheese
¾ c. sifted flour
½ c. raisons
oil

Beat together egg yolks, water, sugar and salt. Stir in cottage cheese. Add flour and until thoroughly blended. Mix in raisons. Beat egg whites until form stiff peaks and fold into cottage cheese mixture. Heat oil ¼ inch deep in frying pan. Drop about ¼ c. cheese mix in hot oil. Fry each side until golden brown. Drain on paper towel. Makes about 12. Serve how with sour cream.
