Esther Gordons Crustless California Quiche

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

½ lb. zucchini sliced
½ lb. onions sliced
2 green peppers, cut in 1-inch squares
½ pkg. chopped spinach, thawed and drained or ½ lb. mushrooms sliced
12 eggs beaten
1 lb. cheddar jack or brick cheese, grated
1 tsp. arrowroot
½ tsp. oregano, or less, to taste
½ tsp. basil, or less, to taste
1 tsp. salt, or less, to taste
1/8 tsp. pepper

Directions: Steam onions, green pepper, zucchini and mushrooms for 5 minutes. (If using spinach, do not steam) Combine beaten eggs, grated cheese, vegetables, herbs and seasonings. Pour into oiled 9*13-inch pan. Bake 25min. at 350F. Serves 12.
