Mushroom
Onion Cheese Quiche

Ingredients:
1 frozen pie shell
1 large onion
4 oz. canned mushrooms, drained
3 oz. American cheese, torn in strips
2 oz. Muenster cheese, shredded
½ cup milk
1/3 cup flour
½ tsp. baking powder
2 eggs
dash of salt and pepper
Cornflake crumbs (optional)
Directions: Pre-bake pie shell for 10 minutes. Sauté onion
and mushrooms. Put ½ of sautéed mushroom/onion mixture
on bottom of pie shell. Put ½ of cheese on top. Pour in the
balance of the mushroom/onion mixture. Put the rest of the cheese
on top. Mix milk, flour, baking powder, eggs, salt and pepper and
pour it on top. Cover the top with a thin layer of cornflake crumbs
(optional).
