Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

2 cups flour
1 teaspoon soda
1 teaspoon pumpkin pie spice
¼ teaspoon salt
3 eggs
1/3/4 cups sugar
1cup vegetable oil
5 tart apples, peeled, pared and diced [about 5 cups]
1 cup chopped nuts

Directions: Sift flour, measure, add soda, pumpkin pie spice, and salt and sift again. Blend together eggs, sugar and oil. Stir flour mixture into egg mixture. Fold in apples and nuts. Bake in a greased 13 by 9-inch pan in a 350-degree oven for 1 hour. When cool, sprinkle with confectioners sugar and cut into squares.
