Cream Puff Filling

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

2 eggs well beaten
¾ cup sugar
1 tablespoon oil
1 cup water
1 tablespoon potato flour
juice of 1 lemon

Directions:
Mix sugar and potato flour and add to eggs, beating sugar and flour mixtures in slowly. Add lemon juice oil and water and cook in top of double boiler until thick. Let cool and insert in puffs.
