Lemon
Sorbet

1 tablespoon lemon rind, cut in strips 1/16in wide
¾ cup lemon juice
1 cup plus 3 tablespoons sugar
4 cups water
Mint sprigs or champagne as garnish, optional
Directions: Mix lemon rind and lemon juice in large bowl. Heat
sugar with 1 cup of water in saucepan until completely dissolved,
then add remaining 3 cups of water. Add to lemon rind mixture. Process
in ice-cream maker according to manufacturer’s instructions.
If you do not have an ice-cream maker, freeze the mixture and then,
if necessary, process in food processor to soften. To serve, garnish
with sprig of mint or a few tablespoons of champagne, if desired.
