Lemon Sponge Pudding

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

1 cup sugar
¼ cup matzo cake meal
½ tablespoon potato starch
1/8 teaspoon salt
2 tablespoons peanut oil
4 to 5 tablespoons lemon juice
1 teaspoon grated lemon juice
2 egg yolks, well beaten
1 cup water
2 egg whites


1. Preheat oven to 350(degrees Fahrenheit)
2. Combine dry ingredients in mixing bowl. Add oil, lemon juice, and lemon peel. Combine egg yolks and water and add. Stir well.
3. Beat the egg whites until stiff and fold in gently. Pour into an 8 X 8 baking dish. Place in a pan of hot water and bake for 40 to 50 minutes.
