Marshmallows

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!
¼ c. cornstarch
1/3 c. confect. sugar
1 env. Unflavored gel.
1/3 c. water
2/3 c. granulated sugar
½ c. light corn syrup
¼ tsp. salt
1 tsp pure vanilla extract

Directions: Sift together corn starch and conf. Sugar. Lightly butter 8*8 baking pan and sprinkle with 1 tbs. cornstarch mix. Tilt pan in all directions to cover bottom and sides. Blend gel. and water in small saucepan and let soak. Add granulated sugar and stir over low heat until gel. and sugar dissolve. Combine gel. mix, corn syrup, salt and vanilla. Beat at high speed for 15 min. until peaks form. Spread mix over bottom of prepared pan and smooth top. Let stand 2 hrs. or until set. With wet knife, cut mixture into quarters and loosen around the edges. Sprinkle remaining cornstarch on baking sheet and invert marshmallows onto it. Cut each quarter in 9 pieces and roll each in cornstarch mix. Place marshmallow on rack and cover with paper towels. Let stand overnight to dry surface slightly. Store airtight. Will keep for month.
