Microwave
Peanut Brittle

1 cup granulated sugar
1 cup peanuts (shelled)
½ cup white corn syrup
1/8 teaspoon salt
1 tablespoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
Directions: Lightly grease a cookie sheet. In a 1/1/2-quart-baking
dish, combine the granulated sugar, peanuts, syrup and salt. Microwave
the mixture on high power for 6 to 9 minutes or until brown, stirring
well every 4 minutes. Add the butter or margarine and vanilla extract.
Mix well. Microwave on high power for 1 to 3 minutes or until the
mixture reaches the hard crack stage (300 degrees) when tested.
Peanuts will be light brown and syrup will be very hot. Add the
baking soda and gently stir until light and foamy. Pour the mixture
onto the prepared cookie sheet. Let it cool for 30 minutes to 1
hour. When cool, break the peanut brittle into small pieces and
store in an airtight container. Makes 1 pound.
