Savory Fish in Potato Nests

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

1 pound gefilte fish
¾ c. grated American cheese
1 tbspoon lemon juice
1 small onion, minced
3 c. mashed potatoes
¼ c. matzo meal
1 egg, beaten
3 tbspns. butter
1 tspn. salt
1/8 tspn. pepper
4-6 tomatoes slices

Directions: Drain and mash gefilte fish. Add ½ c. grated cheese, lemon juice and onion. Combine mashed potatoes with matzo meal, egg, butter, salt and pepper. Form 4 – 6 nests of mashed potato mixture by dropping mounds on baking dish and making indentations in each with a spoon. Fill with fish mixture. Top with tomato slice, sprinkle with rest of cheese. Bake in 350F oven for 30 minutes.. or until browned. Serves 4 –6.
