Spinach Kugel

Thanks to Harriet Saffer for this week's recipe.

Tip: Double this recipe and put one pan in freezer.

 

Ingredients:

1/2 lb. med. noodles
1 pkge. frozen chopped spinach
1cup Coffee Rich
1 env. onion soup mix
3 eggs
1/4 lb. margarine (Oleo, if possible; if not, another)

 

Method:

Defrost and drain spinach.
Cook noodles according to pkge directions.
Drain.
Add melted margerine.
Mix in all ingredients.
Do not grease pan.
Bake at 350 degrees covered for one hour.

Serves 6-8 .
