with Spicy Eggplant Sauce

Ingredients:
1 med eggplant, cut into 1/4 inch lengthwise slices, unpeeled
non-stick spray
1 med. onion, chopped
2 carrots, peeled & julienned
1 zucchini, julienned
1-1/2 c. crushed tomatoes
3 cloves garlic, minced
1 Tbsp olive oil
2 T (or 1/2 tsp dried) basil
1/4 tsp red pepper flakes
salt and pepper to taste
1 lb linguine
Method:
Preheat broiler. Coat cookie sheet with non-stick spray. Put eggplant
in single layer. Spray with non-stick spray and broil each side
3 to 4 minutes, or until golden brown. Remove from pan, slice into
strips and set aside.
In saucepan, saute onions and carrots in 1 Tbsp oil for 5-7 minutes
or until somewhat soft. Add tomatoes, garlic, basil, red pepper,
and zucchini. Bring to boil. Cover, reduce heat, and simmer for
10 minutes. Add eggplant and simmer additional 10 minutes.
Meanwhile, prepare pasta according to package directions. Pour
sauce over pasta and serve.
