Sunshine Chicken

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

2 to 3 teaspoons curry powder
1¼ teaspoons salt(optional)
¼ teaspoon pepper
6 chicken breast halves, boned and skinned
1½ cups orange juice
1 cup Uncle Bens Converted Brand Rice
¾ cup water
1 tablespoon brown sugar
1 teaspoon dry mustard
Chopped parsley

Directions: Combine curry powder, ½ teaspoon salt and pepper. Sprinkle over chicken; rub seasonings onto top and bottom surfaces of each chicken piece and set aside. In 10-inch skillet, combine orange juice, rice, water, brown sugar, mustard and remaining ¾ teaspoon salt; mix well. Arrange chicken pieces over rice. Bring to a boil. Cover and simmer 20 minutes. Remove from heat and let stand covered until liquid is absorbed, about 5 minutes. Sprinkle with parsley. Makes 6 servings, 281 calories per serving.
