Sweet and Sour Beef

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

3 pounds beef (bone removed)
2 tblsps flour
1 tbsp fat
salt and pepper to taste
¼ cup vinegar
2 tblsps brown sugar
6 gingersnaps or 2 slices dry lekah
1 cup water

Directions: Dredge the meat in flour and brown in fat. Sprinkle with salt and pepper. Place a rack in the kettle or Dutch oven under the meat. Add water, sugar and vinegar and simmer 3 to 3½ hours, covered. Remove meat and stir in crumbled gingersnaps or lekah. Stir while cooking until gravy is thick. Taste and adjust seasonings. Return meat to pot to heat. Slice and serve with mashed or boiled potatoes, potato kugel or pancakes. Serves 6.
