Thai-Basil Chicken

Ingredients:

500g chicken breast
2-4 chili peppers (to taste)
1/2 - 3/4 cup freshly chopped basil
green/spring onions - 1 bunch
Thai fish sauce (soy sauce is a reasonable substitute) - to taste
garlic
olive oil
optional: peanuts

 

Instructions:

The chicken should be half-thawed, so that it can easily be cut into thin strips. Heat your wok considerably, adding the olive oil only when hot. Add chopped onions and minced garlic (when oil is hot), leaving half the onions for later. Peanuts may be a good addition.
Stir with a wooden spoon for a minute or so, then add finely
chopped peppers. Add the chicken, stirring continuously. When all the chicken is done, add the sauce, basil and the rest of the onions. Stir for no longer than a minute.

Serve on white rice, with maybe garlic bread and white wine.
