Yankee
Pot Roast

Ingredients:
4lbs. boneless beef
1 tsp. salt
¼ cup water
1 onion, sliced
½ cup diced turnip
½ cup diced carrot
¼ cup sliced celery with leaves
2 tblsps chopped parsley
Directions: Brown the meat on all sides in a heavy kettle or Dutch
oven, adding fat if needed. Sprinkle with salt. Put on a rack and
add water and onion. Cover and simmer 3 to 4 hours, or until meat
is tender. Add vegetables and simmer, covered 30 minutes. Remove
and thicken gravy if desired, using an little bit of flour and water.
Serve with broad noodles or rice. Serves 6 to 8.
