Cheesy Tomato Pie

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

5 or 6 slices day old bread
½ teaspoon dried basil
3 medium-ripe tomatoes
1/1/2 cups grated Swiss or Jack cheese
2 eggs
1 teaspoon salt
Dash Tabasco
½ teaspoon dry mustard
1/1/2 cups milk

Directions: Remove crust from bread and cut into 1-inch cubes. Press into oiled-9inch pie pan. Sprinkle with basil. Remove skin and core of tomatoes; cut into ¼ inch slices. Starting at the outer edge of pan, overlap the tomato slices until top is covered. Sprinkle with grated cheese. Combine the rest of the ingredients. Pour gently at the edge of the pan so the liquid will be absorbed by the bread. Bake in preheated 375F oven for 30 to 40 min or until cheese is puff and brown. Makes 4 to 5 servings.
