Lekach

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 cup shortening
1 cup honey
1 cup brown sugar (packed)
3 eggs
¼ tspn. salt
¼ tspn. ginger or cinnamon
1 cup extra strength coffee
2 tspns. baking powder
1 tspn. baking soda
3/1/2 cups sifted flour
¾ cu chopped nuts

Directions: Cream the shortening and sugar together add the honey, then the eggs, on at a time. Beat until they are roughly blended and smooth. Combine the soda, baking powder, and coffee in a large cup or pitcher. Add alternately with the flour which has been sifted with the salt and spice. Fold in the chopped nuts which have been dusted in a little flour. Bake in two greased and paper lined loaf pans one hour at 325F or until a tooth pick comes out clean. Cool the pans before removing the slices.
