Orange Cream Meringue Pie

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

¾ cup sugar
5 tbls. cornstarch
½ tsp. salt
2 cups milk
3 egg yolks, beaten
½ cup orange juice
2 tbls. butter
9 in. pie shell, baked

Directions: Combine sugar, cornstarch, salt. Add milk gradually and cook over low, heat until thick and clear, about 6 minutes stirring constantly. Add beaten egg yolks and cook over low heat 6 minutes longer continuing to stir. Remove from heat; add orange juice and butter. Cool. Pour into pastry shell. Top with meringue; bake at 400F until golden brown.

Meringue: 3 egg whites, ¼ tsp. cream of tartar, 6 tbls. sugar. Beat egg whites and cream of tartar until whites stand in soft peaks. Gradually add sugar, beating until firm peaks are formed, spread over filling.
