Brown
Rice Salad
Ingredients:
175g (60z) brown rice
salt
1 red pepper
50g (20z) currants
50g (2oz) roasted cashew nuts
2 tablespoons roasted sunflower seeds
6 spring onions
6 tablespoons soy sauce
3 tablespoons chopped parsley
Preparation:
Cook rice in salted boiling water
for 30-40 minutes until tender. Rinse and drain. Chop spring onions.
Transfer rice to bowl while still warm. Add onions and remaining
ingredients. Toss thoroughly and put in serving dish.
Serves 6-8
