Cool as a Cucumber Kasha Salad

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

3 cups cold cooked kasha
5 to 6 fresh mushrooms, sliced
½ cup sliced scallions
1 medium cucumber, seeded and diced
½ cup sliced scallions
1 medium cucumber, seeded and diced
½ cup sliced celery
1 medium tomato, seeded and diced
2 cups cold cooked peas
¼ cup chopped parsley
½ cup sliced green or black olives
½ cup sliced water chestnuts(optional)
1 (8-ounce) bottle French dressing

Directions: Toss all ingredients with dressing. Chill at least 2 hours before serving. Makes a hearty main-dish vegetarian salad. Note: Instead of French dressing, mayonnaise or oil-and-vinegar dressing can be substituted. Serves 6.
