Mixed Bean Salad

Ingredients:

125g (4oz) butter beans
125g (4oz) haricot beans
125g (4oz) french beans, cut into 1 inch lengths
125g (4oz) red kidney beans
6 spring onions, chopped
2 tablespoons chopped parsley
salt
4 tbsp french dressing

 

Preparation:

Soak beans separately overnight. Drain and place in separate pan. Cover with cold water, bring to the boil and boil steadily for 15 minutes. Lower the heat, cover and simmer for 1 and a half hours, adding a little salt towards the end of cooking - and drain.

Cook the French beans in boiling water for 7 to 8 mins, and drain. Put all the beans in a bowl, and mix in the onions and dressing whilst still warm. Leave to cool.

Stir in parsley and transfer to a Salad bowl to serve.

Serves 6-8
