Salad
Nicoise
Ingredients:
Large deep bowl & vinaigrette
1 cucumber
2 hard boiled eggs
black olives
4 oz green beans (cooked & cold)
185g drained can of tuna
1 large tomato
12-16 new potatoes (cooked & cold)
drained anchovies
lettuce
Preparation:
Shred lettuce, put in bottom of
bowl. Sprinkle with tuna, separated into chunks. Roughly chop cucumber
and tomato and place on top. Cut potato and green beans in half
and place on top, followed by cut eggs. Decorate with black olives
and anchovies.
Pour over vinaigrette.
Serves 4 people, should be eaten
within one day.
