Oliveh Potato and Chicken Salad

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

900 gr. boiling potatoes of uniform size, scrubbed not peeled
Salt and freshly ground pepper
2 cups diced cooked chicken
1½ cups sliced cooked carrots
1 to 1½ cooked peas
2 or 3 small dill pickles, diced
2 to 4 hard-boiled eggs, chopped
½ cup chopped green onions (optional)
3 Tbsp. chopped parsley or dill, or some of each (optional)
¾ to 1¼ cups mayonnaise, regular or light
1 to 2 Tbsp. lemon juice (optional)
1 to 2 tsp. mustard (optional)

(Favorite garnishes for this salad are green or black olives, tomato wedges, radishes, parsley sprigs and thin strips or slices of pickles)
