Rhubarb
Sauce

Ingredients:
2 cups cubed rhubarb
2 cups citrus flavored dietetic soda
Artificial sweetener to equal 4 tablespoons sugar
1 teaspoon vanilla extract
¼ teaspoon orange extract
2 to 3 drops red food coloring (optional)
Directions: Combine rhubarb and dietetic soda in saucepan. Cook
over low heat 20 minutes, or until rhubarb is soft. Pour mixture
into blender container; process at medium speed until mixture is
smooth. Add remaining ingredients; blend. Chill. Divide evenly.
Makes about 2 cups; 4 servings.
