Puffs with Lemon Filling

Ingredients:
½ cup oil
1 cup water
1 cup mazto meal
3 large eggs
Directions: Place water and oil in a double boiler and bring to
a boil. Place over hot water and stir in matzo meal, cooking until
the mixture forms a ball and comes away from the sides of the pan.
Beat in eggs, one at a time, stirring and beating constantly. Remove
from heat and form into mounds, by dropping from tablespoon onto
a greased baking sheet, 2 inches apart to allow for spreading. Bake
preheated 425F
