Simcha Sweet Potato Pancakes

Ingredients:

2 cups mashed sweet potatoes
2 eggs
½ cup coarsely grated onions
4 teaspoons all-purpose flour
1 teaspoon ground nutmeg
1 teaspoon curry powder
½ teaspoon ground black pepper
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon salt
¼ teaspoon cayenne pepper
8 tablespoons unsalted butter or margarine
8 tablespoons vegetable shortening

Directions: Place potatoes and eggs in a medium-size bowl. Squeeze out liquid from grated onions and add onions to bowl. Add flour, nutmeg, curry powder, pepper, salt, and cayenne pepper. Stir well. Cover and refrigerate for 1 hour before cooking.

In a medium-size nonstick pan, melt 2 tablespoons butter or margarine and 2 tablespoons vegetable shortening over medium heat. When oil begins to sizzle, drop spoonfuls of potato mixture to form pancake about ¼ inch thick and 3 inches in diameter. Brown, turn and brown other side. Repeat until all mixture is used, adding more butter or margarine and shortening as necessary. Makes 10 – 12.
