Cream of Onion Soup

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

¼ cup butter
2 cups sliced onions, cut into quarters
3 tblsps. flour
1 quart milk
Salt and pepper to taste
1 cup shredded American type cheese (1/4 lb.)

Directions: Melt butter in a saucepan, add onion, cook and stir until tender but not brown. Add flour and blend. Add 1 cup of milk, stirring constantly, cook until smooth and thickened. Add rest of milk gradually, stirring constantly. Season with salt and pepper to taste. Serve in warmed soup bowls garnished with shredded cheese. Serves 6.
