Cream of Pea Soup

Thanks to Minette Greenman, who will always be loved as a beloved grandmother!

Ingredients:

1 10 oz. package frozen peas, or 1 pound fresh, shelled
½ cup boiling water
1 tsp. salt
¼ cup butter
¼ cup flour
1 qt. milk
1/8 tsp. pepper

Directions: Cook peas in salted boiling water until tender, and retain liquid. Sieve peas with the liquid. Melt butter in saucepan and stir in flour until smooth. Add milk, stirring constantly. Cook and stir until sauce is smooth and thickened. Stir in sieved peas and add pepper. Taste and add salt if desired. Serves 4.
